Matt, I would replace the gaskets on the inlet manifold just in case, it will be easier to cut your own from proper thick gasket paper than try and buy them separately.
When you look closely at the needle is there a wear groove in the idle position where it sits in the needle jet?
If they have been left idling a lot then the needle tends to rattle in the jet and wears the needle as well as enlarging the jet so you end up with a rather rich idle mixture.
Also check your float height is correct, if there's no details in the manual then set the float seam parallel with the carb bowl face.
