Regarding the tipping, it's not all the time. It's usually just for services such as a waitress, taxi driver or barmaid. Be aware though that a lot of these people will up the price a little to include their own tip (perfectly legal) as they know that foreigners rarely tip. Buy something over the counter and you're not expected to tip. You do have to remember though that when you buy that nice little souvenir they will ad the tax on at the till, which I think is some where around 8-9% at the moment. So something priced up at $1 will cost you $1.8 or $1.9 when you come to pay for it.
