Hard to beat a good 90 downhill whatever you fit. But come hills and headwinds they'll be a speck in your mirror.
Don't forget to raise the final drive ratio. The 125 won't rev like a 90 so will end up with slower top speed if you leave the gearing standard.
I use 16/36 sprockets. You'll probably get away with going higher in horizontal Lincolnshire.
